This stunning end of summer salad will make you feel as vibrant as it looks! The magenta center of the watermelon radish and the emerald hues of the kale combine to make a dish as pleasing to the eye as it is to the palate. You can make it on the road or while camping, as long as you have access to a cooler. In fact, it is one of my favorite late-summer meals and something that has sustained me during my many cross-country road trips. Of course, it’s just as worthy of a recipe for at-home preparation as well and is sure to be a hit at any potluck or community gathering. Be sure to use relatively fresh and tender kale for best results.
